<p><strong>Some Important Notes</strong><br />
When you taste Japanese green tea, it will not be bitter like Chinese tea. If you desire a more astringent taste, simply add more tea leaves to the brewing process, increase the temperature, and increase the tea brewing time. If you want a less astringent tea taste, simply reduce the factors mentioned. When infusing tea, you can do so up to 3 times. Use the same temperature but add to the brewing time with each successive brew. If you want to reduce the caffeine, simply discard the first infusion’s liquid.</p>
<p>Knowing how to make tea the right way is very important to the overall tea flavor. The tea brewing process is not exactly simple, but it&#8217;s not difficult either. Simply follow the above guide and you&#8217;ll soon be making Japanese tea like a master. </p>

<p>The first crop of each year, normally in the first weeks of May, generates the top qualities of Japanese tea. They call it the new tea or Chin-Cha. After the dormancy period which is usually during winter, the primary leaves of the season are affluent with nutrients such as catechins and amino acids. These improve the taste and fragrance of this initially cropped tea. The new tea normally has a luminescent, bright green shade, strong fragrance and distinct sweetness. </p>

<p>Among the chief historical figures in the ceremony is Sen no Rikyu who was considered to have accentuated these values in the improvement of the tea ceremony. Sen no Rikyu is attributed by having developed the entire steps in the ceremony and have turned it into a rite which he taught to his students.<br />

<p>Japanese tea drinking was of course first introduced in Japan by the Buddhist monk who came back from China named Eichu. In China, preparing and drinking tea was known for more than hundreds and thousands of years. The tea that was popular at that time when the Buddhist monk came back was called brick tea where the tea leaves was then pounded and steamed, then pressed into molds and dried up until it is hard. It will be then grounded by mortar and the grounded tea leaves will then be mix with many other flavorings and herbs. The drinking and preparation of the tea evolved from then and used by so many people from medicinal used and now from pleasure used too.</p>
<p>There is also called the Japanese tea ceremony where in an independent tea house, a tea is to be prepared and served. The host will let the guest wait in the garden until they are finished preparing the tea. Then they will first purify themselves by ritually washing their hands and by using water from a small stone, rinsed their mouth before drinking tea. Then they will proceed in the garden of the tea house. The guest will enter the tea houses, removing their shoes and be seated according to prestige.
